Sushi Bowl Recipe

It’s been far too long since I’ve posted (2 weeks?) and I’m sorry! Between school, track, and holidays my life has definitely picked up the pace. I’ve also caught an unfortunate cold so I’m working on that, too. If you follow me on Instagram, you might have seen my sushi bowl posting not too far back. (If you haven’t, go check now or forever be confused!) I LOVE sushi, but I suck at making it. So today I’m going to share a little tip with all of you on how to make your own sushi without struggling through the “roll” part.

For Valentine’s Day my boyfriend and I took a field trip to Wholefoods (my favorite place on Earth) and got all the ingredients we needed. Sushi bowls are surprisingly easy, even in a college kitchen! Here’s a look at our shopping list:

  • 1 small bag of Sushi rice
  • 2 Avocados
  • 1 package of nori (make sure it is dried fish-free!)
  • wasabi & soy sauce (stole the individual packets offered at the sushi bar)
  • 1 cucumber

We also roasted Brussel sprouts (my fave!) and found this awesome pack of garlic/brussel sprouts mixed & ready for roasting, so we picked that up too. Plus a small bottle of olive oil. I highly suggest the sprouts on the side, it really made the meal! But that’s another story.

If you’re not vegan or you’re a pescatarian, some fresh fish would also go well in the bowl. Or even edamame! I was just feeling a simple avocado sushi bowl, but the basics are so versatile you can really take it wherever you want. The key to the bowl, in my opinion, was the avocado rose. You’ve probably seen them all over  foodtagrams, but if you need some reference here ya go!

They seem really hard to make, and we definitely had some slightly too-ripe avocados for styling. But somehow my boyfriend managed to make a pretty good one! Here are some step-by-step instructions curtesy of Wholly Vegan for you to try, too.

In steps 4 to 5, you slide the slices apart into a line, then slowly curl in. That step can be difficult, but after a couple avocados you’ll get it!

Cook the sushi rice in a pot with water according to the direction, then scoop into bowls, add the avocado roses, pieces of nori, cucumber slices and sauces. Feel free to add anything else you like, and let me know if you try this! Here’s a pic of our finished project:
